His expression tightens a little, but it's not really fair to jump to the worst option. Papyrus let him take the knife, which means he knew Sans might be concerned, which means he knew that whole incident wasn't exactly normal. (Plenty of other ways to do damage to a skull besides a knife, though. Sans can't confiscate the whole workshop. Wouldn't, with Papyrus rusting again.)
When it comes to wordplay and "I can't stand my feet", Sans barely stops himself from replying "can't, or don't want to?" Why start a fight? It'd lead to the same conclusion--Papyrus will need to make himself something else to stand on regardless. And it's Papyrus's decision.
